Pheasants Tears Kisi

Description

As obsure as it is delicious.  Kisi is a highly aromatic and rare native Georgian white grape.  Fermented entirely in wax-lined amphorae (qvevri) with its skins.  Orange marmalade, dried apricot, honeycomb flavors with a distinct black tea tannic structure.  Pair with powerfully flavored dishes.
