So many things about this sparkling break the rules: A collaboration between an established and esteemed Champagne winemaker, Rodolphe Peters of famed Pierre Peters and Rhys Vineyards. Most people do not associate the nearly unknown Santa Cruz Mountains (just south of SF) AVA with world class quality wine, and especially not sparkling wine. Lastly, in order to mask inferior fruit, winemaking techniques, and to make a fruitier/juicier style, sparkling wine producers will add a healthy dosage (sugar) to the second fermentation – this is the norm and widely practiced. This sparkling wine however is made with a very small dosage – just enough to trigger and maintain the 2nd fermentation and to preserve the freshness and elegance of the 100% Chardonnay it is made from.
