Wine of the Month

This month, the spotlight isn't on a single region, winery or grape, but rather a remarkable soil that these two wines have in common. Kimmeridgian soil is a layer of limestone-clay soil that was formed 150 million years ago in France's Paris Basin, at a time when it was a fossil-rich seabed! Water retention, minerality, salinity and acidity are all hallmarks of this soil and this special composition has helped to shape the legendary wines of Champagne, Chablis, Sancerre and Menetou-Salon, including these two!
