Rather than the traditional aging time of 3-5 years, the V.E.P. is aged for 11-20 years, deepening and intensifying the flavors to wondrous effect. Slightly sweeter than green Chartreuse, this has softer herbal flavors and distinct citrus, violet, and honey notes accentuated by anise and saffron.
